Chicken peach salad


I made this quick and easy sweet salad for lunch today. I used store-bought smoked rotisserie chicken, chopped up the breast and added them to a bowl of mixed butter lettuce and green leaf lettuce, basil, peach chunks (canned), scallions, and thinly sliced shallots. This was tossed with some white pepper and balsamic vinaigrette. Simple ingredients but full of flavor!
