
I made a delicious creamy batch of spinach pesto two nights ago. It's certainly a great way to use up baby spinach that were about to expire, and a sneaky way to add raw spinach into our diet. Being a garlic lover, I used 4 good size garlic cloves instead of three that was on the recipe. And I used slightly more than 3 tbs of pine nuts. I tossed this pesto with whole wheat spaghetti and served it with homemade meatballs. Yum!
So throughout dinner, I was crossing my fingers and keeping mum about the spinach aspect from my family. No worries as it turned out they loved it, especially my husband! Well, except for my eldest boy who gave it neither a thumbs up nor down. I reckon the bright green was too much for him, ha!
Anyhow, next time I shall use some fresh basil leaves instead of the dried ones; I bet it's gonna elevate it even more, can't wait!
